Hospitality must be more than the limits we place on it.
We tend to think of hospitality solely as a business area. As a means to achieving a profit that only stakeholders see. But as someone who believes in food's power to nourish and to bond us, I believe hospitality should be more.
Hospitality is supposed to be about welcoming, making people feel at home, and of encouraging each other's human dignity. Hospitality needs to include justice: to pay living wages, eliminate the sub-minimum wage, source sustainably and locally, and invest in our communities.
